One of the most important elements in Spanish cookery is the slow cooking of super quality veggies. The humble onion treated with patience and time (that most of us don't possess,) cooked slowly in good quality olive oil is one such element. We use this delish cheat at home in our tortilla base with some waxy spuds and local egg  Yu-um!

Ramon and his papa sources ingredients directly from Murcia’s renowned Huerta, one of Spain’s most fertile agricultural regions. They work with their local growers using seasonal produce and premium olive oil.   They cook their sauces slowly staying true to their authentic Spanish origins.
